Having kept crayfish for many years, I would definitely not keep them in such tiny tanks. As you mention, they are fantastic escape artists and a 5 gallon tank is not a challenge. In my experience a 20 gallon would be minimum tank size. I also would not recommend keeping multiple crayfish in anything less than a 4 ft tank. In a 20 gallon, as mentioned in the video, “it will not end well”.
