I don't want to deal with fry. Can I keep all-male guppies or all-female together? Not a mix?

Yes you can, preferably males in a good sized tank with a good bit of hiding to keep aggression and stress down, same if you went with all girls. If you want no fry, you'll want to buy all males. Be sure you check their anal fins, some females can in fact be colorful like males, so don't make a mistake there or you will have fry anyways, and a very stressed mum.
