Biological cleaner

I don’t have much problem with clarity anymore. My tank did use to stink, and be a little unclear. But I started using that top fin stuff for a few months. And those 2 problems have almost gone away completely. But what I’m having troubles with, is I will have random ammonia spikes Some weeks. Like 3 or 4 days after a water change, the ammonia will go up to 1 or 2 ppm. That might be because my tank is a little overstocked, but some weeks it won’t do that. So I was wondering if I used the stability if it would stop those spikes of ammonia
