Post Fish Compatibility and Best 'Background' Plants?

Okay so at first I posted this in the wrong place, but I think this is right now, haha:

I have a 270L (71g-74g) tank set up currently and I've started stocking:
Fish = 10 Rummynose Tetra
Plants = 2 Swords, 1 Hemigraphis Exotica, 2 Hydrocotyle Leucocephala, and 2 Hairgrass

My question(s) is/are:

I'm looking for some tall thin plants like Vallisneria to add to the back for full coverage, I've looked at types of Vallisneria and I love them, but would anyone know of a type that grows no more than 45-55cm in height? - Usual petstore gravel is being used, small grained, around 1cm diameter as well as fine gravel at 0.4cm.
Don't worry about lighting specifics, I'll gladly get that to the requirements of the plants.

As for the Fish Compatibility:
The fish I plan to add are:
1 Angelfish
1 Golden Dwarf Cichlid (Nannacara Anomala)
5-6 Boesemani Rainbowfish
1 Dwarf Gourami

Will the Boesemani nip, or stress the Angel with their apparently fast swimming, and how will the Boesemani school together? Is it a sloppy or a tight school?
Will the Boesemani's be okay with the rest of the fish?
Will the Nannacara be alright with these other fish too?


Also, I recently added a new piece of driftwood to my aquarium and it's got the white cloudy fungus on it, I know it's the usual, but am I better of waiting for it to just die off or would I be better off scraping it off?
