potted anubias out of water
is it ok to have my anubias with only water covering the pot and roots
Yes. Anubias is an amphibious bog plant that will grow emersed (as you've described, leaves in air but roots wet) or submersed. In its naturalhabitat in Africa, it most often grows emersed, rarely submersed, though in aquaria it does very well fully submersed.
I don't know to what extent the leaves may change when grown emersed. Some plants form different leaves because leaves in air have different issues from those in water. According to Kasselmann, the varieties of Anubias barteri (which is likely the species you will have) have the same leaf forms emersed and submersed, but a couple of the varieties have slghtly larger leaves emersed.
