Could I use big pieces of quartz crystal like instead of rocks? Just sitting here on ebay and I saw these crystals like in the pic below and thought about just them in the sand and using only floating plants.

I would worry that one of my fish opens himself with the tip of the crystal...

Make sure as well they are pure quartz and do not have metallic seems in them.

Some quartz can contain small iron seems, run a magnet along them to check.

It would also be slightly concerned at the sharp point but other than that they are totally fine to use.

also crystal in water isent very visible and I would beleive you would only really notice it when light goes trough or dirt gets on it hehe

Wouldnt recommend it over rocks but you can if you want to so badly
