Discus female or male

I have two discus about 6 months and 8 months. I know how to tell if there male and female but how long does it take before I should know if they are male and female. Right now it seem to look like they are both female. They have no pointy fin its rounded.

Question also I am getting a 55 gallon tank in the first week of december. How many discus could I put in there? I have two now.

Another wierd thing I noticed is now that my discus are a lot better and eating they have become very shy and they never used to be like that.

Just wondering I have a 30 gallon tanks with everything. How much money should I ask for it? All it would need is water and fish. It even comes with rocks and plants.
