eaten jungle val

i have a few jungle val plants in my tank that my swordtails seem to have found very tasty and have eaten them down to little tiny stumps :-?. they aren't dead, they just aren't likely to do much in that tank for a while (if ever). are plants particularly picky about water temps? i was thinking i'd take them out with a little bit of substrate and put them in a jar with tank water and fertilizer and put it on my desk to see if they would grow back at all. any reason this wouldn't work?

With adequate light and some nutrients they should grow. Window daylight will suffice for light if it is bright.
