Are there any plants Goldfish and Paradise Fish won't eat?

I have 2 Goldfish and 2 Paradise Fish in a 20 gallon tank with very acidic water (6.4-6.0) and am having a horrible time with a hindered cycle. Nitrites appeared and then disappeared when the pH dropped on its own to 6.0. Still 0 on Nitrates and it is week 7. Our tap water is soft and has ammonia in it (like 1.0 ppm). Cycling this tank has been horrible and I'm leaning towards getting plants in the tank to take care of the 2.0ppm ammonia in the tank. Problem is the goldfish! So I'm asking if there are ANY plants I could get that they will leave alone?

I knew this question had come up recently, and found the thread. In it, Lupin, one of our members who is highly versed in goldfish issues, provided this link to info on plants that suit goldfish:

I know from the other thread why you are asking, so in this list look for fast growing plants since they assimilate more nutrients including ammonia. Stem plants are one of the best, and any floating plant is ideal.

Byron.
