i have a 40 gallon tank unocupied and thought id try platys. how many can be in the tank?

I would say a group of 10 would be plenty because they are live bearers and will multiply pretty fast that way you have extra room for the fry.
You will have a bizillon in no time and they are pretty hardy....you could get a few females and then see what else you may want to add

Or better yet put your pleco thats in your 10 gallon in this 40 gallon.
by himself? or with trpicals?
You could put him with them it would be much better than the 10 hes in now.
will he get bigger?
That depends on what kind of pleco he is. Could you post a picture of him?
