Snails and a Betta?
 
Is that a no-no? I was considering getting a snail or two because they sound entertaining but I do have a betta and I wouldn't want him to eat it...
Do they stop trying to eat said snail after the snail reaches a certain size?

Your betta will just harass the snail. I wouldn't advise the mix.

I have a betta who has had both MTS and ramshorn in his tank and he has never done more than look at then, i think it depends on the betta.

MTS are hardly an issue as they have trapdoors to protect themselves however apple snails (which is what I am guessing the one the OP is looking for) are quite vulnerable to attacks.
