Cycling a tank, not sure what readings mean?

I have a 20 gallon tank that has been cycling for three weeks, I have water sprite and willow moss along with two piece of drift wood in the tank.

When I set the tank up I used water from my established tank and also used the filter media.

Today I tested my water and the Nitrite is at 1 and the nitrate is at 80 but the amonia is at 0? I am really confused at to what is going on.

Any help would be appreciated, I set this tank up for tiger shrimp and they will be here Tuesday, I ordered them online thinking my tank would be cycled by then.

Is their anyway I can safely drop the Nitrite in my tank?

Thanks in advance for your help.
