Newbie NPT plant question

I am wanting to do a couple low tech, low light NPTs. The first is a 5.5 Gallon tank. Once that is going well, I would like to take some of the trimming and start a 15 Gallon NPT. Would any of these plants work? And would any be better for the beginner?

I would avoid all stem plants; they are fast growing which means higher light and nutrient needs. Plus they tend to grow so fast that you would be continually pulling them up and replanting the tops. In larger tanks this is not so much work. And not just the labour, but for a more consistent aquascape stem plants are best left out.

Not sure what Vallisneria nana is, may have just been a typo, but the Corkscrew Vallisneria [click the name for the profile] is fine esp in hard water; in soft water it doesn't do so well.
