Anyone know what this is and how it should be grown? I've got it planted, but due to the trailing roots along the single main stem, it could very well be a floater.

Agree. And these are stem plants that grow creeping along the substrate when grown emersed or ascendant (vertically) when grown submersed. As with many stem plants, roots and leaves grow from the nodes along the stem. I think most aquarists grow this plant as in your photo, the cut end of the stem anchored in the substrate. As it grows, it will require trimming (pruning).
