Rum Cake Recipe
Here you go: Let me know if you make it and how you like it.
1 box moist yellow cake mix
1 pkg. vanilla instant pudding
4 large eggs
1/2 cup canola oil
1/2 cup light rum
1/2 cup water
1/2 cup chopped pecans
Butter and flour a bundt pan, add chopped pecans
to bottom of pan. Mix all other ingredients and pour into pan.
Bake @ 350 for 40-50 mins. (time depends on how hot your oven runs - start testing after 35 mins.)
Test for doneness and cool in pan on rack.
When cool, take out of pan and poke holes in top of cake (i use a straw). The bigger
the holes, the more glaze will seep into the cake.
1 stick butter
1 cup of granulated sugar
1/4 cup light rum
1/4 cup water
Melt butter in med. saucepan. Add sugar, rum and water.
Simmer over med. heat stirring occasionally until it thickens slightly. It will thicken
more as it cools. Pour slowly over rum cake until cake absorbs most
of it. Scoop up glaze from outside and middle of cake and spoon
over the top.
