Or do they ask "We have red, blue, and green available. Which one do you want?" Or they take a HM female, and send it over?

Oh...well if I do (which I probably will not, but who knows...) I open my mail one day, see a package, open it, and see a random color HM female?

They give you a random colour.. See it says this: Your live fish may not match the image shown due to natural variations in each species. Each companion animal is different in shape, color, and personality.
That means they'll just send you a random one.. there's no option for choosing colour anyway :(

But, if I do want I pay for her then...poof! I get a HM female but of a color. Like do I say "I want a red HM female" or do they give you a random color?

Usually they just put the picture of an example betta there. Just to show you what the tail would look like etc. The actual fish would be a HM but she could be any colour and any size, its not specific.. It says that under the picture of the female on the site as well..

Aww! That's so cute! I call my eldest mouse Old lady Nadia or Grandmother Nadia, the rest of the mice are younger by a year so she's always telling them what to do lol!

very good! I just got done taking her out side, climbing on the 200 year old oak tree we have in our backyard, enjoying the gardens, saying hi to the cat, and visiting Aunt Chloey. Aunt Chloey is my dog...her name is Chloey. But she's SO protective of Boo and she licks her and whines when she's in her cage and is SOOO protective, we call her "Aunt Chloey" lol.
