I would say 3-4 very comfortably but soon that number will triple in baby platies =)

3-4 I would say.

Currently I have a 2-2 male/female ration in said tank, and one male appears to have claimed the 2 females. Would this be a case where an addition of 2 more females would be okay?

Don't add any more fish. Platies are very prolific and your tank will soon have bioload problems. Eliminate one male instead. This is better than adding too many fish.
