It is obvious why your platies died. First of all, using the fish to cycle means they are undergoing the process of being posioned by ammonia and nitrites. Both substances can permanently damage the fish's body system. I would suggest you borrow a friend's established filter media to speed up the cycling so you will have lesser problems. If you are to cycle the tank using fish, then you must remember to constantly monitor your water for ammonia, nitrites, nitrates and pH. Once you detect the first two substances at 0.25 and above, do water changes immediately until both fall to zero. IMO, fishless cycling is better than cycling with fish. Using established filter media provided the tank where the media came from is disease-free is better than cycling with fish.

Your other issue is wrong mix with a betta. If the fight has actually lingered for some time, then the betta should have been the one removed. Moving the stressed or injured fish around brings more stress thus damaging the fish further and they eventually succumb to such circumstances.
