Do you just let the plants float around the top?

How about celery or kale? We've run out on spinach and he didn't touch it or the red romaine anyway.

How long do you leave the veggies in the tank before you remove what is left over?

When I do veggies for my snails, I put them in before I turn out the lights and I remove left-overs in the morning. Veggies will actually rot pretty fast in the tank, so if you feed them during the day, probably best to remove what is left after six-eight hours. You could probably leave them in there for a full day if you have water below 76 degrees, but I don't like to do that. lol Most of the time tropical tanks are kept at 76-82 degrees, so the food will decompose and rot faster if left more than 12 hours or so.

Kale is fine to feed, it's high the stuff they need to keep their shells healthy and hard. But some just don't like certain foods. Mine wont touch lettuce either. lol I have no idea about celery, I think it may have too much of a bite to it, but I've never looked into that one.
