Hermit crab; other crab basics

Well I see them at the LFS all the time and I am looking atmaybe getting a couple. Most likely a 10 gallon tank so not very many of them but maybe 3-5 if they will be happy that way. Here are the questions:
What kind of substrate
Do you need both fresh and salt water because my lfs does not use salt water.
What do they eat
How much light do they need
Will they go after other things if they can catch them like frogs, newts, fish, etc.

Also, is there a species of land type crab that will like the same type of envronment that a hermit does? I have small land/rock species that could easily be caught on the beach here and they are often seen in tidal water that is more brachish than salt water.

I have seen the REAL hermit crabs before but I didn't want to get them because I am not ready to set up a salt tank yet. As for the land crabs, I have seen them in land tanks at Point Defiance Aquarium kept in 55 gallon aquariums. The tank had a basic rocky sandy setup with a small amount of water for them to lay eggs in and keep wet. I know the local ones would need a salt type setup but I have also seen fresh water crabs before in a similar setup that I have seen land Hermit crabs kept in.
