I am a complete disbeliever in any "cycle helpers". They might work, they will cost you though. Clone if you can, if not I always recommend doing fishless. Cycling with fish even if a "helper" does work for you it doesn't take a lot of ammonia or nitrite to harm a fish. This harm is also permanent. A cycled fish will never stay as healthy or live as long as an fish that has never been in a cycle. Also you are much more likely to have to deal with diseases by doing a fish in cycle and medicating a 75 gal is generally not very cheap.
As far as the party I agree with byron. In a mature tank it would be fine. I maintain my 55gal in a daycare and was watching a kid drive a large plastic truck along the glass yesterday  . If a tank is going to be a loud and busy area it is best to start with larger fish first. It will always take a while for them to settle in, till then they are easily stressed out by noise and such. It helps if there are other mature fish that remain calm in the tank
