You don't need to get a 75 gal, unless you want an excuse to get that big of a tank Check the profiles here of both the fish you have. I have one Gourami in a 43 gal (with other fish too) and she is doing well. The shark will get 6 inches, and a 55 gal would be nice for him. It depends what other fish you want to put in with the two you have. The 10 gallon won't last you long, but it can make a nice hospital tank.
Profile for Red tail calls for 48 inches in length minimum. A gourami will do well in that size tank too.
