Angelfish Death; kH always Low

Hi! Long post is long. Input much appreciated!
My 60 US Gallon has been running since last summer, over a year now. I usually do 20% water change once a week, but today I did a 30% water change because last night, sometime after lights off my angelfish died. He was a black marble angel with red stripe looking eyes. I got him about 7-ish months ago when he was about nickle size. He was really peaceful with the other fish and didn't mind when the other fish swam into him. Nice fish, I'll miss him.

This angel was acting funny for about 1 week. Swimming low and off to the other side of the tank, away from the other 2 angels. Usually the three swim together. I thought this angel was maturing and getting territorial (they're quite big now). But apparently he was ill. His body showed trauma or something to his eye, which was red and bulging out. So idk what that means
-"pop eye" wouldn't explain it, because he looked fine when he was alive! Right?

Before water change today, I tested the water. Ammonia (API liquid test) was 0. Everything on the strip was normal (API paper strip test) except kH, which was very low. I know my tap is very soft water. I had added real driftwood about ~~4 months ago and the water is still a slightly different colour, but barely noticeable. So I am aware driftwood makes the water even more soft. Is there anything I can do about my kH? Should I care if it's low?

3 weeks ago I added more albino corydoras to my tank. I now have 9. I have had 4 corys in my house before I even set up my 60! lol (back when I had a 15g). So I bought 5 more albinos, and I did not quarantine. They're very active and healthy (though much paler than mine when I first bought them; they were in the glofish tank at petsmart, I think that's why). Could they have brought something to my tank and should I be worried?

Currently my tank has
2 Anglefish (both marble; 1 veiltail; 1 normal tail)
1 male swordtail/blue micky mouse platy hybrid (his name is Mets; he's very cool!)
3 female platy who I've had since I set up my 60 and have been pregnant for like 18mo or something
1 zebra danio (small enough to be eaten, but hasn't been!)
9 Albino Corydora catfish (various ages and sizes)
1 Pleco (small-medium-ish)
Various Live Plants
Black Sand Substrate
2 Filters

Real Driftwood
Prime for tap / Flourish Excell
LED Lights

I plan to wait until my platys and lone zebra danio pass before I add another fish. I assume my platy fish, as they're over a year old and are from Petsmart aren't gonna live for as long as a cilchild would. My tank eventually will have just the corys, the pleco, the 2 angels, and a school of some kinda peaceful schooling fish my angels won't eat, and by then my plants will be huge.
