Awesome tanks :) I really like your Axolotls, they are very interesting looking.
Now about your plants dying...What type of light do you have on them? The type of light can affect the rate at which your plants grow. Often the lights with a wide spectrum help. Now along with the lighting, do you have any CO2 injection? When I had a planted tank I didn't have one, but from what I have read and saw, they make a HUGE difference. They aren't needed but they help a lot. And a final note, many LFS carry a special substrate that promotes plant growth. The name escapes me at the moment but any clerk will be able to help you with that. Again, I didn't have it due to price, but from what I'm told it does help a lot.
Not to criticize your cool tanks, but in my opinion, a 20 gallon tank is small for an Oscar, depending on its size it will out-grow the tank quickly. But otherwise, I am extremely jealous of your tanks, very nice :)
