Choice 1 is good except, I would leave out the African Leaf Fish. As they often prefer to have a species only tank and will most likely attack the gourami(s) and eat the swordtails.
(I would go with the dwarf gouramis. most other gourami may get to big for your tank)
Choice 2
The Rainbow Shark is not recommended for your tank. They will outgrow your tank. I would suggest a Bristlenose Plecostomus. So if you don't have the Rainbow Shark, You could add another molly or two, or even a second Bristlenose Pleco.
Keep in mind with the platys, mollies, and swordtails, make sure they are only males unless you want them breeding.
