Yes. Carbon will adsorb [not absorb] various nutrients. Planted tanks should have filtration mainly by the plants, that's what they do best. Filters we use are only needed for water movement through media/pads to remove particulate matter. Never chemical filtration unless it is specifically required (example to remove medications after treatment).
Having said that, carbon only lasts a limited time so eventually it is useless as "carbon" anyway; but as it is not needed (with plants), don't use it.
