Decapitation works, if you swift and sure, which most people aren't. In most cases you end up with a fish flopping around on the table, or a bleeding mess of a fish that's still twitching. (Sorry for being so graphic.)
I would never decapitate my fish, even if the only other option would be to freeze it. Atleast freezing it won't cause the fish excruciating pain. If at all possible, though, use the clove oil and vodka method.
This can be a very touchy subject, and I know everyone has their own opinion on this. Whatever you decide to do to your fish, please make sure to do it in a humane way.
