Bouncy pH & KH - How long?

I was prepared to have bouncy pH & KH due to the source water being KH 1 and pH 6.8
In the 55g its settled pretty quick and remained that way (before the ick attach & large w/c)
The 45g Rummy tank is 'steady' at 7-7.2 pH now and KH at constant 2

Now the 10g to become a shrimp tank is another matter, I added 1 rock in it (which I can provide a pic) its not given off any calcium that can be tested via vinegar or NO2 regnant and its been in my former tanks as well.

However that 10g is BOUNCY
Started at KH 1 to KH 7 to KH 5 now and pH starting at 6.8 up to 7.8 down to 7.6 now...(Readings taken over the past 10 days).

The higher range is great for the shrimps, which is what I wanted to achieve, the only question I have while its cycling (food fed, no fish) how long will it bounce up & down till its stable??

that is a zebra rock i believe and it is fine for tanks, im not sure but it might just be the cycle bouncing it, cycles can take up to a month depending on the tank
