Are you sure it was from the sand? A lot of people keep plecos on sand. They are common in Amazon-type biotopes in which people commonly have sand.
Potting the plants doesn't always save them from goldfish. I've got a potted sword in my goldfish tank and I still find a nibbled leave after I forget a feeding. Before they got rooted, I did find them uprooted a few times. It's not perfect, but it's much better than what I've got. Little monsters...
I actually do plan to set up a tank like that. I'd like to do a riverine hardscape setup. Except it would be a bit smaller (30 gallons) and have a type of hillstream loach. I'd also like to add a few really gnarly pieces of driftwood. Probably wouldn't be the greatest with the goldfish and their delicate fins, tho.
