The ability to acclimate to something like that is going to depend on the species... and a number of other things. Temp is not the only issue... salinity is also an issue.
I would like to warn against collecting a wild starfish to add to a home aquarium. Chances are this animal would be picked up close to shore, which can bring lots of disease and pollutions issues with it. Some starfish are also carnivorous, and will eat your fish and other animals in the tank. Some species of starfish also get extremely large.
Before attempting something like this, you will also need to check the local laws where that waterway is located. Most locations have very strict regulations about removing an animal from its wild habitat without a permit, and the fines if you get caught with it are huge.
The safest way to add a starfish to your tank is to purchase one from a lfs. Do your research about species, select one carefully, and then take it home and acclimate it properly. That is going to be your best bet for success. And don't forget to put it into a quarantine tank for 2 - 3 wks before adding it to your main tank. It would be a shame to skip that important part and risk losing everything in your tank over something that could have easily been avoided.
