Yup, one big one or two smaller ones. With your African cichlids, I think you should get 2 canisters rather than 1.

125 - BGK, chanchito cichlid, pictus cats, silver dollars, palmas bichir
125 - cichlids (severums, bolivian rams, chocolate), rainbows ( turquoise, red), loaches (angelicus, zebra, kuhli and horseface), plecos (BN, RL and clown), denison barbs, tiretrack eel, pearl gouramis, betta
90 - Congo tetras, african knife, upside down cats, spotted ctenopoma, kribensis, delhezzi bichir
2.5 - betta

I clean mine twice a year. There is nothing easier, in my experience. Cleaning them is a bit more work than with HOBs, but on the whole they are very easy.

Look no further.... There is a brand of canister filter on eBay called sunsun (also sold under different names, like aquatop) that I like very much - I have 4 of them. They are the white filters (do a search for canister filter).

There are 3 sizes - 265 GPH, 370 GPH and 525 GPH. I would do at least two of the 265s, if not one 265 and one 370. We're it my tank I would have two 370s on it.

I am not knowledgable about African cichlids, but I'm pretty sure that in a 75 gallon tank you can have like 15-20 fish.
