Well, you want it tender but not mushy. In other words, it comes apart easily but isn't slimy. Get the water boiling rapidly, drop in individual leaves, and be ready to test in about 30 seconds. It should definitely not be any more than a couple of minutes. Then you want to drop it in very cold / ice water to stop the cooking. It might take some experimenting and then you'll know from experience. You could probably use frozen spinach and just heat until it thaws completely.
