Agree, we need the info Angel requested. One thing jumps out, nitrates at zero but nitrite at .25 means something is wrong, like a mini-cycle. Which means ammonia must have risen first from whatever caused this, and now nitrite. Plus you indicate plants have been dying which also adds to the problem. But we'll all have more no doubt when you post the info.
One comment on snails, I agree with Angel, snails are most unlikely to be the cause of any of this. And personally I find them useful. If you really don;t want them, pick them out. On no condition use any of the snail remover chemicals; these can stress the fish an dmake things even worse.
Eight fish in a 10g is going to require some regular maintenance, especially without live plants which would help you. I trust you perform a weekly (at least) partial water change, and it is significant (one-third to half the tank)?
