Do I have to worry about both species of Astyanax mexicanus nipping at sail fin mollies?
I wouldn't think so, provided the tank is sufficient size and the fish has a small group. They are voracious eaters though, pushing other fish aside as mentioned in the profile, so this may be what you are thinking of with respect to nipping.
