Yes, you can just cut the longer stems. The cuttings should still grow.

Anarcharis can grow floating or planted.

I would usally cut them in half and reburry the cut section and now you have two the same size and then 4 and 6 and it will go on as long as you like since these plants grow out of control very easy. I use them as food plants for certain fish so I love these plants.
