ive seen that peas can be fed to platys. what about other vegtables like carrots , green beans ect. what about canned vegs or does it have to be fresh?

When I kept Mollies, they seemed to like fresh green veggies the best. E.g., zucchini, spinach, etc. Fresh is better because freezing and canning veggies zaps out the nutrients, although flash frozen is by far the lesser of two evils. I wouldn't give canned at all because they usually add things like salt and/or sugar to the veggies, or other preservatives.

I give my Otos and Cory fresh veggies, and freeze them myself. Then I know how long they've been frozen, etc.

Fresh is always better but blanched frozen vegetables retain their nutrition very well.
You might blanch or nuke and chop fresh vegetables to make them more tender. Peas are excellent if they're skin is removed.
