Okay, so my nitrIte is zero and my nitrAte is about three.
My filter is a 30-60 gallon aqueon I believe..everything has been fine except for the last three days..

So you just have one filter on a 50 gallon? Usually, with hang on back filter, you want your filtration to cycle at least 8-10x the volume of your tank. Kind of sounds like you don't have enough beneficial bacteria in your filter to handle your bioload. I have 2 off brand canister filters that work really good and cost the same as a good HOB. I feel that canister filters are far superior to the hang on back kind. You might want to look in to adding another filter.
