So is one feeding a day ok? Because I only feed them when I have class. And what about the weekend? Or breaks? Will they be ok? At least for the weekend?

Once a day is fine to feed! :)
Weekends they can also survive with out food, however, don't do the common overfeeding problem on friday/monday, as most of the food that they don't eat will just add to ammonia! Breaks I not so sure, how long? :)

Well our breaks are usuall 1-2 weeks. But Winter break is about 3-4 (we live in a desert, it's on fair)

I would suggest "taking" out the platies and have 4 cherry barbs.
Maybe something like this?:
2 guppies (males)
1 apple snail (mystery)
3 - 4 Shrimp (cherries) <<< Way more colourful plus they extremely hardy for a small animal!
4 Cherry Barbs

But it does happen and they are called Turbo corns. It might not happen to you but it doesn't mean it doesn't happen either.
