stocking a 55g tank

So I got my new tank all set up and it's doing its thing without fish for now.

It has a gravel substrate masterfully hiding a bed of fluorite, and if I can remember right, the plants are: water wisteria, anubias, amazon sword, java fern, moss ball, and there's some kind of fern thing.
Some of the gravel came from my well established 10g tank, and I'm going to move some of the filter bacteria to the new tank's filter. The filter is a Top Fin power filter for 75g tanks. I moved over the plastic castle from the 10g, and I found this!

What could all the little white spots be?! They're all over the inside of the castle, and there are a few on the outside and a couple on the walls of the 10g. (I would have left it out of the new tank but I don't think they're hurting the fish.)

Now, for my dilemma:
What should I put in this thing???
I have a few platies and a molly that are going to have to be moved into it, which seems to limit my options. I really want to have a couple Oscars, but I've heard they're not the friendliest. I have a friend who can take the platies, but his tank isn't very large and I don't want just throw fish at him. My other idea was to have a big group of gouramis, and get my molly a couple friends. Any other ideas would be greatly appreciated :) Thanks!

Do you have a Nerite snail? Those kind of look like Nerite eggs to me...

As for stocking...what are the parameters of your water in regards to kh, gh, ph? Do you have a water test kit? The API Liquid Master Test Kit has a ph test, and you can usually find gh/kh on your cities water supply website, or you can purchase a test kit for it (API sells one, I think it's around $7).

I ask because Mollies and Swordtails usually prefer harder water, while most species of gourami like softer water, so they aren't really a good mix in regards to water hardness.

I do have Nerite snails, 5 in fact. Looks like I'm about to have a lot more! (I can try to sell a few here, right?) Do you know how long the eggs take to hatch?
Thanks for mentioning the water hardness. I don't have any parameters for my tank water right now, I was planning to fix the water to suit the fish I decided upon. I guess I'll either keep my molly where he is or give him away if I decide to go with the gouramis.

They probably wouldn't hatch anyway, because I realized earlier that I saw a few of the white things on the walls of the tank a couple weeks ago, after I soaked the entire tank in superhot water and scrubbed the castle with antibacterial soap. :/

I don't have any test systems yet, but I'll order a few tonight.

It's pretty difficult to 'fix' water (those Ph Up and Ph Down products don't work very well and can be incredibly dangerous to fish), so I really recommend going with the type of water you have (there are a lot of stocking options for any range of water, so no worries!)

I also bought my gh/kh testing kit, I've used it a few times when doing the seasonal tap water testing, so it can come in handy!
