Many rocks are fine, some, like limestone will of course affect pH. I suspect that granite is not a problem, but am not sure. A good test is to put a bit of white vinegar on the rock, if the acid in the vinegar causes any fizzing on the rock, it's a no go for the aquarium.
The best rocks are rocks from streams, rivers, lakes and such after they have been sufficiently cleaned. These also tend to look the most natural inasmuch as the natural aquascape would attempt to emulate the Amazon (river, not dot com).
