I'm thinking of putting jack Dempsey into my 125 gallon aquarium, I'm reading that there a moderately aggressive fish and if you should only keep 1 only or a whole bunch. But I'de like to have multiple types of fish, are there any good species that can handle being with them? My tank is also planted which I hear might be an issue is there a way to cut back on plant damage to?

There are several other cichlids which should do ok with a JD in your tank. Oscar, Firemouth, Convict, Green terror, maybe Texas cichlid to name a few. Of course, it also depends on the temperament of each individual fish. If you buy them young and I introduce them to the tank at the same time you'll have better luck than trying to introduce mature adults. In my 150 (same footprint as a 125 except taller) I have an Oscar, Black belt, Firemouth and a convict along with some other non cichlid fish and there is a good harmony. You will need to be prepared to rehome or move fish around if it's not working out. You might also consider the Electric Blue JD as there are much more mild mannered than the standard JDs and could be kept with milder cichlids such as severum, rams, angels, etc.
For plants you might try tougher plants such as Anubias, swords and java fern. I never kept plants with mine. Just driftwood and rocks.
