how do you know for "sure"when cycled..

Did a water change this past sunday and afterwards tested the water, parameters were 0 ammonia, 0 nitrite and 5 nitrate so I get excited thinking I'm finally cycled. Tested monday and came away with same readings, tested today and showed. 25 ammonia, was really bummed out. Is this common? How long must I get cycled readings to know I'm for sure cycled

Four consecutive days of zero for ammonia and nitrites BEFORE water change, and some detectable nitrAtes.
Nitrites drop rather quickly compared to ammonia once they are present, but overfeeding the fish is usual culprit for extended readings for ammonia if no ammonia is present from the tap, and no new fish other than the danios have been added.
Cleaning filter material in tapwater or replacing it in newly established tanks can prolong the development of biological filter as well.

The most important medication in your fish medicine cabinet is.. Clean water.
