Most do them on a weekly basis, to remove fish waste that may build up, and to vaccuum to gravel (there's a weeks worth of poo and who knows what else down there!), and also because, as JDM says, it's a lot easier to get in the tank for maintenance.

Are you still using buckets? With a larger tank it's a lot easier to use a hose connected to the sink.
