there is no such thing as a limit to how many plants you can keep per gallon. either you have no plants, lightly planted, moderately planted or heavily planted. sounds like your lfs don't know to much. and no, co2 won't hurt your fish unless you inject too much. plants are mainly made up of carbon so they will benefit from it. there is a chart on how much to inject based on your ph level. also you may find it better to mail order your plants. bigger variety and alot better quality. either way, dip your plants unless you don't mind possibly having snails.
