Question Carbon or Ammonia Remover?

So i figured it was about time to change the carbon bag in my 55gallon tank's filter, and bought another one. On the same shelf next to the carbon bags were Ammonia Remover filter inserts. It's basically a bag filled with white rocks.
On the box for the carbon bag, it says 'Chemical Stage.'
The ammonia bag says 'Alternate Chemical Stage.'
Which one is better? Or can I go ahead and use both?
I asked an employee at the store and the lady said 'You know, I'm not sure."
