Between oak and maple I'd go with oak, since people make syrup out of maple sap. Just a hunch, but I'd guess the maple has more sap in it that might not be good for your aquarium. My little mini tree thing is still doing good, but the bigger branch has yet to completely waterlog so it'll be a while before that's in the tank.
