I don't agree with that at all. Only the smaller neons and rasboras MIGHT eventually be eaten, but severums have small mouths for their size and they are positioned at the bottom of their head. A cichlids ability to eat other fish is largely a factor of its mouth. Some have large, expandable mouths and others like severums do not. The larger the mouth, the stronger the vacuum that's created and the better they are at sucking their food in. Fish that don't inhale food bite at it, which requires speed, or stealth, both of which the severum lacks.
Not sure why you think the Corys wouldn't be on the menu under that pretense. Spines fold back - such fish get swallowed head first which negates the effectiveness of the spines. But I do agree - they won't get eaten either.
