Swords are great- there are some really nice ones that grow very tall. You'll probably want to add some root tabs (fertilizer) to the gravel below your plants as sword just suck nutrients out of the substrate.
Stem plants can grow quite tall and there are some nice, low maintenance ones. Anubias is a great, slow growing plant. Many of them grow very tall. They don't require very high light, their leaves are very waxy (and therefore hardy) and they are pretty difficult to kill.
