Not sure this applies to fish but I've read numerous places that carbonation (as in sodas, water, etc) leaches calcium. I know my plants require it for decent growth and it's also a mineral that fish need. I don't think it would be a good idea.

I am not sure I fallow. Do you mean make soda water and then add it to the fish tank? I think it would work, but you would be adding a few un-necessary steps compared to just injecting CO2 into the aquarium and I don’t think it would work as efficiently, you would have to add every few hours, and have big co2 spikes. If you have the equipment to make soda water than you have the equipment to do CO2 injection. The nice thing about the CO2 injection is it is practically maintenance free. I like you thinking though
