Sometimes you just have to try different veggies and find what your particular fish likes or doesn't like.
Good veggies are zucchini, yam, cucumber, shelled peas. Blanch any of these to kill bacteria and soften them a bit. They will float unless weighed down.
Quality staple foods will provide the vegetable matter that they need; however, the previous suggestions are good. I've never made any special provisions for vegetable matter with my gourami and they have always done well for me.
